San Dionisio Ocotepec lies 65 km from Oaxaca, the capital city, in the Central Valleys, a region with an unequaled agricultural wealth. We are inspired to bring to the world the mezcal produced by families with more than four generations of experience. Cerro de la Cruz is a natural source of water located in San Dionisio Ocotepec, from which we collect water for our production process.

Step by step

GIVE TIME TO TIME (jima or cut off)

The time of maturity of the agave before the jima or the cut off is important to accomplish agave with a sufficient concentration of sugar that allows us to have a juicy fruit from each agave heart.

ARDE LA TIERRA (Roast)
BURNS FROM THE SOIL

Stones, wood, agave pineapples, minerals, history, illusion and passion are all combined in the oven to give rise to the cooking reaching 900 degrees of heat and obtaining the fruit of the agave that the earth provides.

GRINDING

An Egyptian mill crushes the cooked agave pineapples to obtain the bagasse, along with the juices that will star in this story.

UNIQUE CREATION (Fermentation)

In ocote wood vats, the fermentation process will be carried out naturally, creating the aromas and flavors that will be adorning every drink we make. This process takes between 7 and 8 days, depending on the environmental conditions.

HANDCRAFTED PURIFICATION (Distillation)

Two distillations take place in copper stills at temperatures of 800 degrees to obtain the liquid that will transport you to unique encounters and unforgettable memories. Our method is very slow and very careful to prevent wort particles from entering the distillation process.

THE ICE ON THE CAKE (Packaging and Labeling)

Each liter of mezcal is filtered to obtain a completely transparent and bright liquid, where drop by drop the bottles to be filled in will be dressed, completely by hand, with their labels and thus have the product ready to be enjoyed.
